RAVIMBOMANGA OF MADAGASCAR ( IPOMEA batatas)
Recipe: Sauce sweet potato leaves , number of persons: 4

Ingredients: 500 g sweet potato leaves , washed and finely chopped 400g beef , cubed 1 fresh fish , snapper or tilapia , 4 freshes okra , finely chopped 200ml palm oil , 1 large onion chopped , 1 bouillon cube or Maggi cube, 1 bunch green onions, finely chopped , salt to taste , 1 smoked fish , optional 1 tablespoon crushed crayfish, 3 cups water
Preparing the sauce potato leaves :
1 - In a large pot add meat , fish and 1 cup water . Boil for 10 minutes or until fish is cooked .
2 - Remove the fish and set aside. Add potato leaves with the remainder water .
3 - Add the palm oil , onion, green onion, bouillon cube and cook for 10 minutes.
4 - Remove the bones of fresh fish and if you add the smoked fish washed and cut into pieces.
5 - In the pot , add the fish , crayfish and simmer for 10 minutes.
6 - Stir in okra and cook for 20 minutes or until you can see the oil on top. Stir in salt and pepper to taste. Serve sauce with rice or FouFou and Bon Appetit!
